why is copper kettles used in making of candy?
while watching the History channel, they were making candy and using copper kettles, what difference does that make?

Copper transfers heat very well. Its best to use for making candy
Copper is an excellent conductor of heat - allowing the heat to quickly enter the candy. An even better heat conductor would be silver, but that's not practical.
Copper is a GREAT conductor (this is why it's used to make electrical cables). The conductivity allows the heat to distribute evenly. A difference of just a few degrees in candy making can ruin the batch (too cool and it won't hit the right temperature and the chemical structure won't be right, too warm and it will change too much).

It's because copper conducts heat very well, and does it very very evenly. Candy is very sensative to getting just the right tempreture all at the same time, so round bottomed copper kettles are perfect.
I have always heard that copper heats evenly, and when making candy that would be a plus, that way it will not burn too easy....I know I have a set of Emeril cookware and it has a copper bottom and they are great.......
